José Bernardes Santana, coffee grower with twenty years of experience, is the proprietor and responsible for the administration of “Pedra Redonda” Farm. The property is placed in an area with altitude that varies partially between 940 and 1400 meters and uneven topography, what provides an excellent atmosphere for the cultivation of the coffee.

The predominant soil is the dark red humid latossolo, of good fertility. Concerned in preserving the fauna and the flora of the area, José Bernardes Santana maintains Atlantic forest reserves in the farm, besides being devoted to the reforestation of native species, provided for this task with the supply of seedlings and attendance of the State Institute of Forests, organ of the Government of the state of Minas Gerais. 

The planting and the crop are accomplished manually with the purpose of generating more employments in the area.     The farm maintains thirty fixed employees and, in crop period, this number arrives to hundred and ten, all registered in agreement with the labor laws. The employees still receive every necessary attendance so that they have a worthy life. Another treated subject with a lot of rigidity is the infantile work; children and adolescents are not contracted in “ Pedra Redonda” Farm until they reach enough age for the work, as foreseen in the Child and Adolescent’s Statute. 

System of processing of coffee 

After having picked, the coffee is washed, going soon after by the peeler of cherry coffee. The water used in this phase of the processing it is totally recycled, with the use several decantação tanks.  The creation of fish, accomplished in these tanks, it is a proof for the fiscalizadores organs that the processing of the coffee used in the farm it doesn't pollute the environment. 

 In the sequence, the grains are carried for drejing in suspended or cemented yards, where they are separate in agreement with the quality. The handling in this phase receives special attention for the preservation of the quality and characteristics of the grains. After the quality selection - with the coffee going by the catador of stones, sieves and electronic selector of grains - the lots are stored, being classified separately.   

Concern with the quality 

The quality is a constant concern in “Pedra Redonda” Farm, from the planting and crop to the benefit and delivery of the coffee. In 2004 twenty chalets will be built for the property to have the necessary infrastructure to receive national and international visitors, interested in the production and commercialization of special coffees beyond credenciados professionals to promote courses about cultivation of special coffee.
